Ingredients:
- 1/3 cup to 1/2 cup dark chocolate chips
- 1 big chunk of butter
- 12–15 dates (I used 14 dates)
- 4–5 tablespoons almond butter (or peanut butter)
- Chopped pistachios (salted or plain, depending on your preference)
Instructions:
- Melt the Chocolate: In a microwave-safe bowl, melt 1/3 cup of dark chocolate chips with a big chunk of butter. Stir until smooth and set it aside.
- Prepare the Dates:Take about 12–15 dates (I used 14 dates), remove the seeds, and cut them in half. Arrange the dates in a baking tray lined with parchment paper.
- Press the Dates:Take a small glass bowl or any slightly heavy object and press the dates down, flattening them as much as possible. If your dates are dry, it may be harder to press them down, but fresh dates should be easier.
- Add Almond Butter:Spread 4–5 tablespoons of almond butter (or peanut butter) evenly over the dates. This adds a nice nutty flavor to the bark.
- Add the Chocolate:Pour the melted dark chocolate over the almond butter, ensuring it's evenly spread. Make sure there’s enough chocolate as it helps hold the bark together.
- Top with Pistachios:Sprinkle chopped pistachios over the chocolate layer. If you’re using plain pistachios, sprinkle a little sea salt on top to balance the flavor.
- Freeze the Bark:Freeze the tray for 8 to 10 hours, or overnight, until fully set. I left mine in the freezer overnight.
