Spinach Bonda (Keerai Bonda) Recipe Ingredients:
- 2 to 3 cups of spinach (finely chopped)
- 1 medium onion (finely chopped)
- A few curry leaves and coriander leaves (chopped)
- 1 tsp of crushed ginger and garlic
- Salt to taste
- A pinch of asafoetida (perungayam)
- 1/4 tsp of turmeric powder
- 1/2 tsp of red chili powder
- 1 1/4 cups of gram flour (besan)
- 1/4 cup of rice flour
- 1/2 tsp of crushed fennel seeds (or samba seeds)
- A pinch of baking soda
- Water (if needed)
- Oil for frying
Instructions:
Prepare the Mixture:
In a bowl, add 2 to 3 cups of chopped spinach, 1 chopped onion, a few curry leaves and coriander leaves, 1 tsp of crushed ginger and garlic, salt, a pinch of asafoetida, 1/4 tsp of turmeric powder, and 1/2 tsp of red chili powder.
Add Dry Ingredients:
Add 1 1/4 cups of gram flour, 1/4 cup of rice flour, 1/2 tsp of crushed fennel seeds, and a pinch of baking soda. Mix everything well.
Form the Dough:
If the mixture feels dry, add 1-2 tbsp of water to form a dough. The dough should be firm enough to shape into balls.
Fry the Bondas:
Heat oil in a frying pan. Drop lime-sized balls of dough into the hot oil and fry them over medium heat until golden brown and crispy on the outside. Fry in batches, ensuring the oil remains at the right temperature.
Serve:
Once fried, remove the bondas and drain excess oil. Serve hot with tea. These Spinach Bondas are perfect for a quick and tasty snack!
