Ingredients:

  • 12-15 dates
  • 2 cups almond flour

Instructions:

  1. Soak the dates: Take 12-15 dates and soak them in hot water for 10 minutes or until they become soft.
  2. Blend the dates: Drain the water completely and blend the dates into a fine paste or puree.
  3. Mix the dough: Transfer the date puree to a mixing bowl and add 2 cups of almond flour. Mix thoroughly until you can form a dough ball. If the dough is too sticky, add more almond flour. If it’s too thick, add a little more date puree or a few drops of water.
  4. Shape the cookies: Take a lime-sized portion of the dough, roll it into a ball, and flatten it with your hands (you can also use a fork to press gently and create a design).
  5. Prepare for baking: Place parchment paper on a baking tray and arrange the cookies, leaving enough space between them.
  6. Preheat the oven: Preheat your oven to 350°F (175°C).
  7. Bake the cookies: Bake the cookies for 12-20 minutes or until the edges are golden brown.
  8. Cool and enjoy: Once baked, let the cookies cool. They should be soft and chewy on the inside with a crispy outside.

Enjoy these healthy, gluten-free, and delicious almond cookies!
