Today, we’re going to make a delicious coconut bun in just 10 minutes. There’s no need to knead the dough or do any baking. Yes, a tasty, bakery-style coconut bun, also known as thengai bun in Tamil. Let’s get started!

Ingredients:
- 6 dabbeli buns (or any soft buns)
- 1 cup grated fresh coconut (or frozen, if fresh isn’t available)
- 1/4 cup sugar (adjust to taste)
- 1/8 tsp cardamom powder
- 10 chopped cashew nuts (or almonds)
- 2 tbsps tutti frutti
- 2 tsp ghee (for roasting)
- Butter (for grilling)

Preparation method:
- Heat ghee in a pan. Add chopped cashew nuts and roast until golden brown. Add grated coconut and mix well. Cook for a few minutes.
- Stir in cardamom powder and sugar, mixing thoroughly. Cook until well blended, then remove from heat. Add tutti frutti and mix well. Allow to cool slightly.
- Cut the buns as shown in the video and press the inside slightly to hold the filling. Fill each bun with the coconut mixture.
- Preheat a panini grill or a dosa pan. Brush the buns with a generous amount of butter. Grill for a few minutes until golden brown and you see grill marks. Enjoy the buns as they are or cut in half for easy eating.
Notes:
- For this recipe, I'm using store-bought dabbeli buns, which are perfect for this dish. They taste just like the bakery buns or the tea kadai buns you love.
- I’m using fresh coconut slices for this recipe, as they taste much better than frozen. However, feel free to use frozen coconut if fresh isn't available.
- If you don’t have a panini grill, feel free to use a regular dosa pan to grill them. Just make sure the filling doesn’t spill out.
- Feel free to replace the cashew nuts with chopped almonds or any other nuts of your choice.
