Instant coconut bun in just 10 Minutes

Today, we’re going to make a delicious coconut bun in just 10 minutes. There’s no need to knead the dough or do any baking. Yes, a tasty, bakery-style coconut bun, also known as thengai bun in Tamil. Let’s get started!

Ingredients:

  • 6 dabbeli buns (or any soft buns)
  • 1 cup grated fresh coconut (or frozen, if fresh isn’t available)
  • 1/4 cup sugar (adjust to taste)
  • 1/8 tsp cardamom powder
  • 10 chopped cashew nuts (or almonds)
  • 2 tbsps tutti frutti
  • 2 tsp ghee (for roasting)
  • Butter (for grilling)

Preparation method:

  1. Heat ghee in a pan. Add chopped cashew nuts and roast until golden brown. Add grated coconut and mix well. Cook for a few minutes. 
  2. Stir in cardamom powder and sugar, mixing thoroughly. Cook until well blended, then remove from heat. Add tutti frutti and mix well. Allow to cool slightly. 
  3. Cut the buns as shown in the video and press the inside slightly to hold the filling. Fill each bun with the coconut mixture. 
  4. Preheat a panini grill or a dosa pan. Brush the buns with a generous amount of butter. Grill for a few minutes until golden brown and you see grill marks. Enjoy the buns as they are or cut in half for easy eating.

Notes: 
  • For this recipe, I'm using store-bought dabbeli buns, which are perfect for this dish. They taste just like the bakery buns or the tea kadai buns you love.
  • I’m using fresh coconut slices for this recipe, as they taste much better than frozen. However, feel free to use frozen coconut if fresh isn't available.
  • If you don’t have a panini grill, feel free to use a regular dosa pan to grill them. Just make sure the filling doesn’t spill out.
  • Feel free to replace the cashew nuts with chopped almonds or any other nuts of your choice.
