While store-bought options often contain harmful preservatives, making small batches of paste at home allows you to enjoy it without any risks.

Ginger Garlic paste Recipe:
Ingredients:
Ginger chopped - 1 cup
Garlic chopped - 1 cup
Salt - 1/8 to 1/4 tsp
Turmeric powder - 1/8 tsp
1 tbsp - Olive oil
Little extra olive oil on top of paste (optional step)
Do not add water
Method:
1. To make a paste, chop equal quantities of ginger and garlic. You can use slightly more garlic than ginger, but keep the ginger quantity equal to or slightly less than the garlic.
2. Always chop the garlic and ginger into small pieces before grinding, as larger pieces can be difficult to grind into a smooth paste. This step prevents the ginger garlic paste from turning green in color.
3. Wash the ginger and garlic, then pat dry or air dry them completely. Ensure they are free of any moisture when making the paste.
Alternatively, you can wipe off the dirt instead of washing to avoid any potential moisture that could spoil the paste.
4. Grind the garlic first, followed by the ginger, to avoid any uneven pieces and ensure a smooth paste. Garlic tends to be more stubborn to grind compared to ginger, so processing it first helps prevent any large pieces that could spoil the entire batch and cause it to turn green in color.
Grind the mixture thoroughly until you no longer see any pieces of ginger or garlic.
5. Avoid using or touching the paste while grinding. Always use a spatula or spoon to scrape the sides, rather than your hands. This tip helps prevent the paste from getting spoiled and increases its shelf life.
6. Add salt, turmeric powder, and olive oil while grinding. This not only acts as a preservative but also helps the ginger garlic paste stay fresh and prevents it from spoiling.
6. Grind the mixture thoroughly until you achieve a fine paste consistency. Now, the ginger garlic paste is ready. Take a look at the texture and color. If you've followed all the steps correctly, this color will remain consistent.
7. Allow the paste to cool down completely before storing it in an airtight glass container in the refrigerator. Please use glass bottles instead of plastic ones to store the ginger garlic paste.
It will stay fresh for months; in my experience, it was still good even after two months. If you prefer, you can also freeze the paste in an ice cube tray for a longer period of time.
Additional tip: Finally, consider adding a small amount of olive oil on top of the ginger garlic paste to prevent it from spoiling. While this step is optional, I've found it to be very helpful.
