Vegetable seekh kebab, a wide variety of vegetables are used in this recipe along with paneer/Indian cottage cheese and air fried to crisp and well cooked.
Ingredients: Serves 4 to 6- 2 medium - Potato (boiled)
- 1 cup - Paneer (grated)
- 1/2 cup - Frozen green peas
- 1/2 cup to 1 cup - Green Beans (chopped)
- 1/2 to 1 cup - Carrot (grated)
- 1/2 to 1 cup - Beetroot (grated)
- 1 no - Onion (chopped)
- 1 tbsp - Ginger chopped
- 1 tbsp - Garlic chopped
- 1 no - Green chilies chopped
- 1 handful - Mint leaves
- 1 handful - Coriander leaves
- 1/4 tsp - Turmeric powder
- 1 tsp - Red chili powder (or add as needed)
- 1 1/2 tsp - Coriander powder
- 1/4 tsp - Garam masala powder
- 1 tsp - Chaat masala
- 4 to 5 tbsp - Besan/gram flour (as a binding agent)
- 1 to 2 tbsp - Cashew nuts chopped
- 1 to 2 tbsp - Raisin chopped
- Salt to taste
- Skewers as needed
- Oil to brush the kebab
Preparation method:
- Dry roast the besan /gram flour/ kadala maavu over low flame until it releases nice aroma. Do not over roast. Color of besan should not change.
- Heat oil in a pan, add ginger,garlic, green chilies and onion chopped, saute until the color changes. Followed by all the vegetables, saute for a minute and cover with a lid. Cook until the vegetables are soft.
- Finally add handful of mint leaves and coriander leaves, saute for a minute and switch off the stove.
- Allow them to cool completely and grind the mixture in a blender to a slightly fine paste. Transfer the ground paste to a mixing bowl. Add boiled potato, grated paneer, cashew nuts, raisins, followed by all the spice powders and salt. finally add the roasted besan powder and mix well thoroughly using hands.
- Squeeze some lemon juice at the end and continue to mix well. Apply oil in your hands and take a big ball and try to shape around the skewers as shown in the video.
- Preheat the air fryer for 3 minutes. Then place the prepared skewers and brush with oil on top and air fry for 5 to 10 mins or until it is well cooked and crispy on top. Serve the vegetable seekh kebab with tomato ketchup or any side dish of your choice .
