Yummy, rich and juicy cake with malai /sweet milk mixture on top along with crunchy nuts. I prepared this cake for my daughter's birthday celebration and it was a big hit. Believe me it is worth trying this recipe.
Ingredients: For cake:
- 1 cup - Maida/All purpose cake
- 1/2 cup - Sugar
- 1/3 cup - Yogurt/curd
- 1/3 cup - Oil (I used canola oil)
- 1/3 cup - Milk (+2 tbsp warm milk to soak saffron)
- Pinch of saffron
- Pinches of cardamom powder
- 1 tsp - Baking powder
- 1/2 tsp - Baking soda
- Chopped nuts for garnishing
- Tutti frutti for garnishing(optional)
- 3 cups - Milk (preferably whole milk)
- 1/4 cup - Sugar
- Pinches of cardamom powder
- Pinches of saffron
Making of malai:
- Take a hard bottomed vessel or non stick, add 3 cups of milk, cardamom powder and saffron, bring it to boil. Let it boil over medium or low flame until it reduces to half.
- Add sugar and mix well, continue to cook until sugar dissolves.Switch off the stove and set this aside.Now Malai is ready.
Making of malai cake:
- Brush the baking pan with oil or butter and set it aside.
- Take a mixing bowl, add yogurt and oil, mix well to blend. Then add sugar and milk, continue to mix well.
- Add saffron soaked milk(2 tbsp warm milk+pinch of saffron) and cardamom powder, mix well. Now wet ingredients are ready.
- Sieve all purpose flour, baking powder and baking soda to the wet ingredients. Gently fold everything to well combine. Do not mix it vigourously.
- Pour this cake mix on to the prepared baking pan. Bake it for 30 mins or until well baked in a preheated oven over 350 F/180 C.Allow them to cool a bit before poking holes with fork on the cake.
- Now pour the malai mixture all over the cake, then garnish with chopped nuts, saffron and tutti Frutti.
- Let the cake soak in malai for 1 to 2 hours before serving.You may also keep the cake in the refrigerator until it is served to have cool and yummy cake. That is completely optional.
