Eggless Malai Cake

Yummy, rich and juicy cake with malai /sweet milk mixture on top along with crunchy nuts. I prepared this cake for my daughter's birthday celebration and it was a big hit. Believe me it is worth trying this recipe.


Ingredients: For cake:
  • 1 cup - Maida/All purpose cake
  • 1/2 cup - Sugar
  • 1/3 cup - Yogurt/curd
  • 1/3 cup - Oil (I used canola oil)
  • 1/3 cup - Milk (+2 tbsp warm milk to soak saffron)
  • Pinch of saffron
  • Pinches of cardamom powder
  • 1 tsp - Baking powder
  • 1/2 tsp - Baking soda
  • Chopped nuts for garnishing
  • Tutti frutti for garnishing(optional)
For making malai:
  • 3 cups - Milk (preferably whole milk)
  • 1/4 cup - Sugar
  • Pinches of cardamom powder
  • Pinches of saffron

Making of malai:
  1. Take a hard bottomed vessel or non stick, add 3 cups of milk, cardamom powder and saffron, bring it to boil. Let it boil over medium or low flame until it reduces to half.
  2. Add sugar and mix well, continue to cook until sugar dissolves.Switch off the stove and set this aside.Now Malai is ready.

Making of malai cake:
  1. Brush the baking pan with oil or butter and set it aside.
  2. Take a mixing bowl, add yogurt and oil, mix well to blend. Then add sugar and milk, continue to mix well.
  3. Add saffron soaked milk(2 tbsp warm milk+pinch of saffron) and cardamom powder, mix well. Now wet ingredients are ready.
  4. Sieve all purpose flour, baking powder and baking soda to the wet ingredients. Gently fold everything to well combine. Do not mix it vigourously.
  5. Pour this cake mix on to the prepared baking pan. Bake it for 30 mins or until well baked in a preheated oven over 350 F/180 C.Allow them to cool a bit before poking holes with fork on the cake.
  6. Now pour the malai mixture all over the cake, then garnish with chopped nuts, saffron and tutti Frutti.
  7. Let the cake soak in malai for 1 to 2 hours before serving.You may also keep the cake in the refrigerator until it is served to have cool and yummy cake. That is completely optional.
