Coconut carrot juice

Simply yummy and filling juice with coconut slices, carrot and jaggery. Good to have as a breakfast as it not only fills your tummy but fills your heart too.


Ingredients: Serves 2 to 3
  • 2 medium - Carrot (cut into cubes or circles)
  • 1 cup - Coconut slices
  • Jaggery powder as needed
  • Pinch of cardamom powder
  • Water as needed
  • Chopped nuts for garnishing (optional )


Preparation method:
  1. Take a blender, add chopped carrot and coconut, just pulse it to break it into small pieces. Now add jaggery powder as needed and cardamom powder along with enough water to grind. Grind it thoroughly to a fine paste.
  2. Filter the juice thoroughly, then grind the pulp again with enough water. Follow the same process until you squeeze out all the juices. Do not add too much water while grinding as it will dilute the natural juice from the carrot and coconut.
  3. Pour the juice over a serving glass, add some chopped nuts on top and serve.
