Chettinad Kavuni arisi sweet/karuppu arisi palakaam/ Black rice pudding is a Chettinad delicacy prepared with black rice/Kavuni arisi/ forbidden rice, coconut, jaggery and ghee. This sweet takes a special place in any wedding happening in Karaikudi area. Black rice is very health as it is high in fibre, protein, less carbohydrate, and natural detoxifier etc.
Ingredients: Serves 4 to 5- 1/2 cup - Black rice/Kavuni arisi
- 3 cups - Water
- 1/2 cup - Coconut grated
- 1/2 to 3/4 cup - Jaggery powder
- Pinch of cardamom powder
- Pinch of salt
- 2 to 3 tsp - Ghee
- 5 to 8 no's - Cashewnuts
- Wash and soak black rice for 12 hours or more / overnight. Pressure cook in 1 1/2 cup of water for 5 to 6 whistles or as needed.
- Consistency of cooked nice - soft inside and outside it will be slightly stiff.
- Now, add coconut grated, jaggery powder, pinch of cardamom powder, pinch of salt, mix well thoroughly and cook for 5 to 10 minutes until jaggery melts and well blends with rice.
- Finally add the cashew nuts roasted in a 3 tsp of ghee. Switch off the stove and serve.
