Kozhukattai is a sweet dish traditionally prepared during Vinayaka Chaturthi festival. Its steamed rice flour dumpling with sweet filling inside.
- Idiyappam flour/rice flour-1 to 2 cups
- Salt to taste
- Hot water as needed
- Sesame oil-1 tbsp
- Coconut-1/4 to 1/2 cup(grated)
- Pachai payaru/green gram-1 cup
- Jaggery - 1 cup
- Cardamon-1/4 tsp
- Ghee - 1 tsp
- Take a mixing bowl, add rice flour and required salt, mix well thoroughly. Meanwhile, bring water to a rolling boil as shown in the picture.
- Add hot water little by little into the rice flour and mix well with a ladle as it will be very hot to handle. Then add sesame oil and mix well.
- Consistency of dough should be a soft and pliable dough. Cover with a lid and keep it aside until use.
- Wash and cook green gram in enough water until it is soft. Set it aside.
- Take a cup of jagger powder and a little water to melt. Once melted, filter it to remove any impurities. Bring back the filtered jaggery syrup to the same pan.
- Add coconut grated, cardamom powder, ghee and finally cooked dal, mix well and continue to cook until it gets thick.Switch off the stove and cool completely.
- Now we have to make the kozhukattai and keep the poornam inside. Lot of ready made achu is available. But if you dont have achu also no problem.
- Apply oil on your left hand take a small amount of rice flour make a ball then press the flour with the other hand. Keep the poornam inside and cover nicely.
- Place the kozhukattais in the idli plate or any steamer for 9 to 10 minutes and steam until cooked.
