Milagai chutney is a spicy chutney prepared with onion, dry red chilies along with others ingredients. It is a best combinations for idli and dosa.

- 20 to 30 – Small onion/ sambar onion
- 4 to 5 no’s – Garlic
- 10 no’s – Dry red chilies (or add as needed)
- 1 handful – Fresh curry leaves
- 1 blueberry sized – Tamarind
- 1 small piece – Jaggery
- Salt to taste
- 2 to 3 tbsp – Sesame oil
- 1/4 tsp – Mustard seeds
- 1/4 tsp – Split black gram/urad dal/Ulunthu
- Pinches of asafoetida/hing/Perungayam
- Heat oil in a pan, add dry red chilies and roast until they are crisp, set it aside.
- In the same pan, add little more oil, add tamarind,garlic ,small onion, fresh curry leaves, saute until small onions turns slightly brown. Switch off the stove and allow them to cool.
- Transfer onion mixture to a blender, along with roasted dry red chilies, jaggery pieces and salt to taste. Blend it to smooth paste.
- Heat oil in a pan, season it with items given in the list for seasonings. Pour the ground onion mixture(add water in which you rinsed your blender) and continue to cook until the oil oozes out. Switch off the stove and serve with hot idli and dosa.
- You may add dry red chilies as per your spice level. As the name indicates Milagai means “Chilies”, chutney is suppose to be spicy.
- Jaggery gives slightly sweet taste to the spicy chutney. It balances the taste.
