- Wash the aval/poha/ flattened rice in a cold running water for 2 minutes and keep it aside until the poha is soaked.
- Heat oil in a pan, add peanuts and roast until they are slightly brown. Set it aside.
- In the same pan, season it with items in the list for seasonings. Followed by chopped onion, ginger and green chilies, little salt and saute until they reach the translucent stage.
- Add turmeric powder, soaked poha/aval (if poha is dry then sprinkle some water-completely optional, but recommended) and sugar, salt to taste, mix well thoroughly.
- Cover with a lid and cook for 2 to 3 minutes. By this time poha /aval will get cooked. Garnish with chopped coriander leaves and roasted peanuts. Serve with hot tea.
- Since my aval was little dry, I added or sprinkled little water just enough to make it soft. It is completely optional.
- Sugar and lemon juice is a must ingredients in this recipe as it adds punch to the dish.
