Simple kuzhambu prepared with garlic/Poondu, onion and tomato. Now we are in a situation were less vegetables are available to cook. Cooking without vegetables are challenging thing to do 24x7, this curry/kuzhambu is one such recipe which is also healthy too.

- 10 to 20 no’s – Garlic
- 10 no’s – Small onion/Sambar onion
- 1 no – Tomato chopped
- 1/4 tsp – Turmeric powder
- 1 to 2 tsp – Red chili powder (or add as needed)
- 2 tsp – Coriander powder
- Salt to taste
- 1 tbsp – Sesame oil/ gingelly oil
- 1/4 tsp – Mustard seeds
- 1/4 tsp – Split black gram/ Urad dal
- fresh curry leaves
- pinch of asafoetida
- Heat sesame oil in a pan, season it with the items given in the list for seasonings. Followed by small onion, saute for few seconds. Next add tomato saute until mushy.
- Add garlic, saute for 2 to 3 minutes. Followed by turmeric powder, red chilli powder, and coriander powder,saute until the raw smell goes.
- Add water around 1 to 1 1/2 cup along with enough salt, bring it to boil and cook for 5 to 10 minutes or until you reach the desired consistency you want.Switch of the stove and serve with hot rice.
- Do not over cook garlic as it will not taste good.
- Do not add too much water while cooking as it will affect the consistency of the curry.
