Simply yummy banana bread and muffin with over ripped banana and nuts. It’s a great breakfast to start your day with.

- 1 1/2 cup – Wheat flour
- 2 large – Eggs
- 3 no- Ripe bananas (medium/large)
- 1/2 cup - unsalted butter at room temperature
- 3/4 cup – Brown sugar/ or regular sugar
- 1 tsp – Baking soda
- 1 tbsp – Flax seed powder
- 1/2 tsp – Salt
- 1/2 tsp - Vanilla extract
- 1/4 cup –Walnuts (chopped)
- 1/4 cup- Raisins
- Grease the loaf pan with butter and dust with flour.Set it aside.Take a mixing bowl, add butter and brown sugar, cream it together.
- Add mashed bananas to the butter and sugar mixture. Followed by 2 eggs and blend it well.
- In a separate bowl, whisk together 1 1/2 cups of flour, 1 tsp of baking soda, 1 tbsp of flax seed powder and 1/2 tsp of salt then add to batter.
- Add 1/2 tsp of vanilla extract and mix in chopped walnuts and raisins. Pour into prepared loaf pan. Bake at 350˚F for 55 to 60 min or until a toothpick inserted into the center comes out clean. Let banana bread rest for 10 min before transferring to a wire rack to cool. With the same batter, I prepared muffins. bake at 350 F for 20 mins.
Notes:
- Baking time depends on the oven you are using. Mine took exactly 60 minutes to cook.
- Flax seed powder is completely optional.
- You may replace brown sugar with our regular sugar or honey.
- You may replace wheat flour with all purpose flour or maida too.
