Phirni is an authentic Indian dessert from the state of Punjab. It is a rich, creamy and delicious dessert prepared with saffron, rice paste, and milk. It is a very popular sweet in the Northern part of India, especially in roadside dhabas. Traditionally earthen bowls or manchatti is used to serve phirni. A yummy dessert that you can prepare and relish with your family for this Diwali.

- 1/4 cup – Basmati rice
- 1 litre or 4 cup – Milk (preferably whole milk or 3%)
- 1/8 tsp – Cardamom powder
- 1/4 cup – Sugar
- Few strands – Saffron
- Chopped nuts for garnishing (almonds, pistachios etc)
Preparation method:
- Wash and soak basmati rice in enough water for about 30 minutes. Drain and grind in a blender to make a coarse paste by adding little water.Set it aside.
- Soak saffron in a tablespoon of lukewarm milk and set it aside.
- Heat milk in a heavy bottom pan, when the milk comes to a boil, add the rice paste and saffron mixture, Continue to cook till the mixture has reduced to half.
- Add sugar and cardamom powder, mix well thoroughly and cook till the mixture is thick. Pour the phirni in earthen bowls or any serving bowl of your choice.
- Garnish with chopped nuts and few saffron strands. Then refrigerate for 6-8 hours before serving.
Notes:
- You may increase or decrease the quantity of sugar as per your taste. 1/4 cup of sugar was just perfect for me.
- Make sure you refrigerate phirni before serving. Serving them in earthen bowls gives nice flavor to the dessert. It also looks very attractive.
- Soaking saffron is completely optional. You may just add it directly to the boiling milk along with rice paste.
