Delicious and healthy pudding prepared with chia seeds and nicely ripe mangoes. Mango chia pudding recipe is truly divine and absolutely addictive. You may have them as a healthy breakfast or yummy dessert. The beauty of this chia seeds pudding is that you may customize this pudding into many ways.You may use any fruits or nuts of your choice. Chia seeds are “superfood” packed with essential fatty acids, protein, Omega-3, antioxidants and calcium. It also provide you energy and supports digestion. They can be used as whole or ground in recipes.

- 1 cup – Coconut milk
- 1 no – Mango (chopped or puree)
- 1/4 cup – Chia seeds
- 1/4 tsp – Vanilla essence
- 1 to 2 tbsp – Honey (or add as needed)
Preparation method:
- Take a mixing bowl, add coconut, chia seeds, vanilla essences, honey to taste, mix well thoroughly without any lumps. Keep it aside for 5 minutes.
- Once again mix well for a minute, cover with plastic wrap and refrigerator for 2 to 3 hours or overnight to set.
- By that time, chia seeds would have expanded and absorbed all of the coconut milk. Meanwhile chop mangoes into small cubes or puree it, set it aside.
- Now basic chia pudding is ready. Take a serving glass, create a layers of chia pudding and mangoes. I did 2 layers of each. Yummy mango chia seed pudding is ready to serve.
Notes:
- You may replace coconut milk with almond milk.
- You may replace honey with maple syrup for sweetness.
- You may either use chopped mangoes or pureed mangoes for this pudding.
