Exotic, and healthy salad prepared with quinoa, tomato, mint and other spices. I prepared this salad for my husband’s office party a long time ago, but I could not click pictures. Recently I prepared this salad again and really enjoyed it.

For cooking quinoa:
- 1 cup - Quinoa
- 10 no’s – Raisins
- 2 cups - Water
- 1 pinch – Salt
- 1/2 cup - Tomatoes, diced
- 1/2 cup - Onion, chopped
- 1/2 cup - Cucumber, diced
- 1/2 cup – Avocado, diced (optional)
- 10 no’s - Sliced almonds, toasted
- 2 tbsp - Chopped fresh mint
- 2 tbsp - Chopped fresh coriander leaves
- 1 tsp – Freshly ground cumin
- 1 or 2 tsp - Lime juice
- 1 to 2 tbsp - Olive oil
- salt to taste
Preparation method:
- Bring water to boil in a pan, add in quinoa, raisins, and a pinch of salt. Cover and let simmer for 12 to 15 minutes or until quinoa is well cooked and allow it to cool to room temperature.
- Transfer cooled quinoa to a mixing bowl, toss together chopped tomatoes, onion, cucumber, avocado, mint, coriander leaves, and almonds. Then season it with cumin powder, lime juice, Olive oil and salt. Mix well thoroughly and chill 1 to 2 hours before serving.
Notes:
- Do not over cook quinoa as it spoils the texture of the salad.
- You may increase or decrease the amount of lime juice as per your taste.
- You may also pressure cook quinoa for 2 whistles instead of open cooking.
