Mango Kesari is a slightly tangy and delicious sweet prepared with mango puree and Rava / Sooji. During my recent visit to the Indian grocery store, I took mango puree which was on sale and was thinking about recipes to prepare with it. I wanted to try Mango Kesari for a very long time, and that has happened now. We all enjoyed it.

Serves 4 to 5
- 1 cup – Rava / Sooji
- 1 cup – Sugar
- 1 cup – Mango puree ( I used store bought puree)
- 3 cups – Water
- 1/4 tsp – Cardamom powder
- 1/4 cup – Ghee
- 10 no’s – Cashew nuts
- 10 no’s – Raisin
Preparation method:
- Heat 2 tbsp of ghee in a pan and fry the cashew nuts and raisin till golden brown in color and keep it aside.
- In the same pan with leftover ghee roast rava over medium flame for 3 minutes or until it turns slightly golden brown. Make sure it doesn’t get burnt. When done, switch off and remove from the stove.
- Add 3 cups of water to the same pan and bring it to boil. Now slowly add roasted rava little by little to the boiling water and keep stirring continuously in order to avoid lumps. Let them cook for few minutes or until rava cooks and water is completely absorbed.
- Followed by mango puree and sugar, mix well thoroughly and continue to cook. Add cardamom powder and remaining ghee, keep stirring until you get the desired consistency.
- Switch off the stove and garnish with fried cashews and raisin. Now Mango kesari is ready to serve.
Notes:
- I have used store bought mango puree. If you have freshly cut mangoes then puree it in a blender and use them for preparing kesari.
- Also I did not add any food colors to bring out this bright yellow color. It is just a natural color from mango puree.
- To make nice slices, you can grease a plate with ghee and spread the kesari on it. After it cools down, cut into square or diamond shape with a knife. It looks beautiful and also helps to serve our guests neatly and easily.
- This is one of the best ingredient ratio I learned over the time and all my friends appreciate me and ask for the ratio I use.
- While preparing regular rava kesari I used to add little milk along with other ingredients. But in this recipe, I did not add milk as it gets curdle.
