I am very happy to announce that this is my “100th post” since I started this blog. Thanks for all my blog readers, followers for encouraging comments and support.
Shahi tukra/ shahi tukray/shahi tukda as the name suggests royal dessert which is an exotic rich bread pudding made with bread, nuts and milk. Shahi tukra is a little similar to “Double ka meetha”, a popular Hyderabad dessert.

Ingredients:

      • 4 pieces – Bread slices (I used white bread)
      • Oil for deep frying
      • 1/4 cup – Sugar                       
      • 1/4 cup – Water

For Rabri / Sauce:

Sweet Rabri is a sweet, condensed milk based dish made by boiling the milk on low heat for a long time until it becomes dense and changes its color to pinkish. Sugar, spices and nuts are added to it to give it flavor. It is chilled and served as dessert.

      • 2 1/2 cups – Whole milk
      • 1 tsp – Corn flour
      • 2 or 3 strands – Saffron
      • 2 - 3 drops – Vanilla essence
      • 1 1/2 tbsp – Pista (Chopped)
      • 1 no – Cardamom

Shahi tukra process

Preparation method:

  1. Boil milk along with cardamom, saffron (soaked in 1 tbsp of warm milk), Corn flour (dilute it in warm milk without lumps). Reduce the milk to half the original quantity and now add vanilla essence and chopped pista; keep it aside.
  2. Prepare sugar syrup by boiling sugar and water in a pan until mixture is thicken like a syrup; keep it aside.
  3. Remove the edges (crust) from the bread and cut the slices into triangles. Deep fry these slices in oil till golden brown and set aside.
  4. Dip the fried bread slices one by one in the sugar syrup and place it in a serving bowl. Pour the milk sauce/rabri over it to soak well; serve cool.

Notes:

  • You can also fry pista in ghee and garnish it on the top of fried bread while serving(instead of adding it to the milk sauce / rabri).
  • You can use ghee to fry bread slices instead of using oil.

  1. shahi tukra happens to be my husband's favourite... i have tasted the hyderabadi version called double ka meetha, loved it too... this looks really mouth watering :)
