It’s a simple and easy way of making soup. This can be prepared with chicken thighs or chicken drumsticks which normally available in any super markets.
Ingredients - 1
7nos-Chicken pieces (with bones)
1 no-Onion
1 no-Tomato
5 pieces-Carrot
½ cup-Celery (optional)
¼ tsp-Ginger
¼ tsp-Garlic
2 pinch-Turmeric powder
2 pinch -Red chilli powder
¼ tsp-Salt
Ingredients - 2
1 tsp-Sesame oil
¼ tsp-Cumin seeds
6 nos-Black peppercorns
5 nos-Curry leaves
¼ tsp-Black pepper powder
2 pinch-salt (or to taste)
1. Clean and wash chicken pieces and cut them into cubes. Cut the bones into halves or crack them. This is important as the marrow inside the bones contain immune fighting properties for colds and flu.
2 .Roughly chop onions, carrots, celery and tomatoes. Pressure cook chicken, onions, celery, carrots, tomatoes, chopped ginger, garlic with turmeric, red chili powder, salt and 2 cups water. Cook up to 4 to 5 whistles.
3. Allow the steam to settle and slowly open the cooker. Now take small pan heat sesame oil and add cumin seeds, black peppercorns and curry leaves. Let it splutter and add this to the soup.
4. Check for salt and sprinkle pepper powder and serve hot. Garnish with finely chopped Coriander leaves.
