Air- fried Kadai Sabzi/ Aloo Capsicum Sabzi

Simple kadai sabzi with potato and capsicums and I had used air fryer to cook vegetables. You may use any vegetables in this recipe instead of potatoes and capsicums.



Ingredients: Serves 3 to 4
  • 2 medium - Potato (chopped into cubes)
  • 2 no's - Capsicums (Red and green) (chopped into cubes)
  • 1 medium - Onion (roughly chopped)
  • 1/4 tsp- Turmeric powder
  • 1 tsp - Red chili powder (or add as needed)
  • 1 1/2 tsp - coriander powder
  • 1/4 tsp - Garam masala powder
  • 1/2 tsp - Kadai masala
  • 1 1/2 tbsp - Rice flour
  • 1 1/2 tbsp - Corn flour
  • 1/4 tsp - Kasuri methi
  • 1 tbsp - Oil for marination
  • Salt to taste
  • Coriander leaves for garnishing
For seasoning:  
  • 1 tbsp - Butter +Oil for seasoning
  • 1/2 tsp - Cumin seeds
  • Pinch of asafoetida/hing


Preparation method:

  1. Take a mixing bowl, add chopped potato and capsicums, turmeric powder, red chili powder, coriander powder, garam masala powder, salt , rice flour, corn flour, oil and mix well, set it aside for 5 to 10 minutes.
  2. Air fry the marinated vegetables for 5 to 10 mins until well cooked and crispy. Set this aside.
  3. heat butter and oil in a kadai, season it with cumin seeds and hing/asafoetida. Followed by chopped onion and little salt, saute and cover with a lid. Cook until they are 3/4 done.
  4. Now add the air fried vegetables along with kadai masala and kauri methi, mix well and cook for 5 more minutes .Switch off the stove and garnish with chopped coriander leaves. Simple kadai sabzi is ready to serve.


Notes:

  • You may replace potato and capsicum with the vegetables of your choice.
  • Kadai masala is available in Indian stores or else you can make it at home.
