Sweet potato masala, a simple masala prepared with sweet potato,spices and coconut, that goes well with rice.

- 2 medium – Sweet potatoes
- 1 no – Onion (chopped)
- 1/4 tsp – Turmeric powder
- 1 to 2 tsp – Red chili powder (or add as needed)
- Pinches of salt
- 2 to 3 tbsp – Coconut grated
- Coriander leaves for garnishing
- Salt to taste
- 1 tbsp – Oil
- 1/4 tsp – Mustard seeds
- 1/4 tsp – Split black gram/urad dal
- 1/4 tsp – Cumin seeds/jeera
- Fresh curry leaves
- Pinches of asafoetida
- Wash, peel and chop sweet potatoes into slightly big cubes. Transfer it to a cooking pan, add onion,salt,turmeric powder, red chili powder, mix well thoroughly.
- Add enough water (just cover the sweet potatoes), cover with a lid and cook until sweet potatoes are soft.
- Meanwhile, heat oil in a pan, season it with items given in the list for seasoning. Pour this mixture over the cooked sweet potatoes.
- Add sugar and continue to cook until the excess water evaporates. Finally add grated coconut and mix well for few minutes. Garnish with coriander leaves and serve hot.
Notes:
- You may increase or decrease the amount of red chili powder as per your spice level.
- Adding pinch of sugar gives a nice punch to the masala.
